This famous Louisiana recipe originated from the sandwiches that were served to striking streetcar workers in 1929. The strikers were monickered as “the poor boys”. Two other version says the name came from the French pour boire which means peace offering, and from the “poor boy’s lunch” served by a certain restaurant in New Orleans. I had a couple of po’ boys at the famous Mother’s Restaurant: established in 1938 and said to be the home of the world’s best baked ham.
